Title: Baked Lemon Shrimp with Garlic

Yield: 6 Servings

2lbLarge shrimp (abt 30), peeled
1cButter (2 sticks)
1 1/2tsSalt or to taste
1tbMinced garlic or to taste
1/2cFlat-leaf parsley leaves washed, spun dry finely chopped
2tbLemon zest (from 2 large lemons)
2tbLemon juice or to taste
  Cooked rice
  Lemon wedges

Preheat oven to 450 F.

In a flameproof baking dish large enough to hold shrimp in one layer melt butter with salt over moderately low heat. Stir in garlic and half of parsley. Add shrimp and bake 5 min. Turn shrimp and sprinkle with remaining parsley, lemon zest, and lemon juice. Bake shrimp until just cooked through, 5-10 min more. Serve with rice and lemon wedges.
